Carmeli’s Dough, a bakery and sister company of Pasta di Guy announces plans to open at Union Street Market, bringing fresh bread and handcrafted doughnuts to the Fort Wayne community.
A new concept by Chef Guy Carmeli, Carmeli’s Dough continues the company’s commitment to high-quality, made-from-scratch food. The bakery will expand on the success of Pasta di Guy, which opened at Union Street Market in early 2024 and has quickly become a local favorite for fresh, customizable pasta dishes.
“When we brought Pasta di Guy to Fort Wayne, we always dreamed of growing here,” Carmeli said. “The community welcomed us with open arms, and our time at Union Street Market has been a success. Now, we’re thrilled to take the next step—opening our bakery and sharing fresh bread and delicious donuts with everyone.”
Carmeli launched Pasta di Guy as a food truck in Florida in 2019 before expanding to two restaurants in Tampa Bay and Wesley Chapel, Florida. Pasta di Guy opened its first location in Fort Wayne at Union Street Market in January 2024. Carmeli’s culinary background includes training at Le Cordon Bleu in London and a deep-rooted passion for Italian-inspired cuisine. The decision to open in Fort Wayne was influenced by his wife’s ties to the area and his appreciation for the local community.
Carmeli’s Dough will be located directly across from Pasta di Guy, in the East Hall of Union Street Market on the Electric Works Campus.
“Union Street Market is all about bringing unique food experiences to the Fort Wayne community, and Carmeli’s Dough is a perfect fit,” said Scott Fergusson, managing director of Union Street Market. “We’re thrilled to see Chef Carmeli expand his presence here and introduce a bakery that will add even more variety and excitement to the market.”
